¼ cup of lemon juice
1 vegetable stock cube
Soak the couscous in 3 cups of boiling water and mix in the vegetable stock. Leave the grain until the water has been absorbed and the couscous is fluffy, then let it get back to room temperature. Add the other ingredients and toss the couscous to blend them in. Your tabouleh is now ready to serve 4 to 6 people. For a non-vegetarian option, add a tin of tuna into the mix.

Avocado, Egg & Chorizo Sandwich
8 slices of sourdough bread
2 sliced avocados
4 eggs
1 large chorizo stick, diced
Non-perishable mayonnaise
This tasty recipe is the best easy-to-make breakfast or lunch when you need a quick and filling meal on your trip. To prepare these four sandwiches, take your sourdough slices and begin by coating the insides with mayo. Fire up your camper stovetop or a campfire and scramble your eggs with the chorizo chunks. Here you can add your preferred seasoning.
